SWEET POTATO WITH SAUTEED VEGETABLES IN A MARINARA SAUCE

Ingredients
- 3 tablespoons olive oil
- 1 medium onion diced
- 1 zucchini sliced in half circles/rounds
- 4 ounces baby bella mushroom slices
- 2 handfuls of fresh baby spinach
- 1/2 cup marinara sauce
- Salt and pepper to taste
- 2 sweet potatoes
Directions
- Step 1 Preheat oven to 350 °F and while heating, wash and poke holes in the sweet potatoes with a knife.
- Step 2 Then place in the oven for 45 minutes to bake. (When done, should be easily pierced with a fork.)
- Step 3 In a saucepan, drizzle the olive oil and heat.
- Step 4 Starting with the diced onions and salt and pepper to taste, start sauteing.
- Step 5 Add the zucchini and mushrooms and continue sauteing.
- Step 6 When done add the baby spinach and fold in with sauteed vegetables until the spinach wilts.
- Step 7 Then add the marinara sauce, mix in and remove from heat.
- Step 8 Slice open the sweet potato on a plate and spoon over the sauteed vegetables in the marinara sauce.
