Vegan Chocolate Cake

Ingredients
- Cake:
- 1 cup unsweetened non dairy milk (I use cashew-almond)
- 1 tablespoon apple cider vinegar
- 2 cups unbleached flour
- 1 3/4 cups granulated sugar (I use raw cane)
- 1 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking soda
- 2 teaspoons baking powder
- 1/2 cup oil (olive, vegetable or melted coconut oil)
- 2/3 cup applesauce (unsweetened is fine)
- 1 tablespoon pure vanilla extract
- 1 cup boiling (or very hot water)
- Chocolate Frosting:
- 1 cup unsweetened cocoa powder
- 1 1/2 cups vegan butter
- 2 teaspoons vanilla extract
- 4 1/2 cups confectioner sugar
- 1/2 tablespoon non-dairy milk (I use cashew-almond)

Directions
- Step 1 For the Cake
- Step 2 Preheat the oven to 350°F and grease 2 9″ round pans or 1 9″ x 13″ rectangular pan. (Both work really well and retain the amazing dense moisture of this dark chocolatey cake)!
- Step 3 In a measuring cup, set aside the 1 cup non dairy milk and add the 1 tablespoon vinegar and stir.
- Step 4 In a large mixing bowl, combine the dry ingredients for the cake and blend together.
- Step 5 Next add the oil, applesauce, non dairy milk mixture and vanilla and mix together thoroughly.
- Step 6 Then add the boiling water and mix in parts until thoroughly blended. It will be very liquidy and thats Ok!
- Step 7 Pour into pan or pans and bake for 30 minutes. Test to see if a knife or toothpick comes out clean if not continue to bake until done.
- Step 8 For the Frosting
- Step 9 Add the cocoa powder to a clean bowl and add small amounts of the butter and blend throughly until all butter has been blended in.
- Step 10 Add half of the confectioner sugar and start blending while adding part of the non dairy milk.
- Step 11 Add the vanilla and the remaining confectioner sugar with enough sugar to keep it thick yet spreadable.
- Step 12 Blend thoroughly and frost cake after it cools.
- Step 13 Top with pieces of sliced strawberries or sprinkles or keep unadorned!
- Step 14 This cake is so deeply rich, chocolatey and moist and so incredibly delicious!!! Friends and family rave and don’t believe it is vegan.
