Baby Spinach, Avocado and Tomato Salad (V, V+, GF)

Ingredients
- 11 ounces of organic baby spinach
- 2 avocados, sliced in bite-size chunks
- 1 small red onion, thinly sliced cutting the rings in half
- 3/4 cup of grape or cherry tomatoes, halved
Directions
- Step 1 Place the baby spinach as a base, in a large bowl.
- Step 2 In a separate bowl combine the avocado chunks, thinly sliced onions, and tomato slices. Toss gently.
- Step 3 Add this mixture on top of the baby spinach and ready to serve!
