Basil Pistachio Pesto (V, V+, GF)

Ingredients
- 3/4 cup of fresh basil leaves
- 1/2 cup extra virgin olive oil
- 1/4 cup shelled pistachios (raw or roasted)
- 2 cloves of fresh garlic, chopped
Directions
- Step 1 Using a food processor, add basil (stems removed), garlic, pistachios, and 1/2 of the olive oil. Then run on low. Using pulse tends to ‘assist’ the blend of the ingredients. You may need to stop it and take a dull knife and run it around the inside of the processor to free the ingredients from the walls. As you continue blending, if too thick, drizzle a small amount of the oil and blend again. Repeat this until the desired consistency is met.
