Blackened Tofu on Grain Bowl (V, V+, GF)

Ingredients
  • For Blackened Tofu:
  • 1 block extra firm tofu (pressed)
  • 1/3 cup soy sauce (if needed, be sure it is vegan and gluten-free)
  • 1 tablespoon paprika
  • 2 teaspoons black pepper
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • For the Grain Bowl and toppings of your choice:
  • 2 types of cooked grains (I use 1 1/2 cups dried grains for 4 servings).
  • 4 ounces dark mixed greens of your choice
  • 1 medium tomato, diced
  • 1 pepper, diced
  • 1/2 cup roasted cashews
  • 1 avocado, sliced or 2 ounces guacamole
  • 1 cup hummus
  • 1/2 cup sour cream
  • Vegan ranch dressing
  • Vegan tahini dressing

Directions
  • Step 1 Take the block of tofu and cover with paper towels or a cotton cloth and press out the water.
  • Step 2 Cut the block into 8 pieces by first slicing lengthwise across the middle (giving you 2 pieces). Then cut each piece into 4 more pieces.
  • Step 3 Set into a shallow edge pan and drizzle the soy sauce over the pieces.
  • Step 4 Let marinate for 30 minutes, flipping at least once.
  • Step 5 For the Blackened Coating: Add all the dry spices together in a flat bottomed container and mix thoroughly.
  • Step 6 Heat a ceramic or teflon coated pan or grill to medium-high.
  • Step 7 When marination is complete, take each piece and place it into the coating and cover each side.
  • Step 8 Then place on the heated surface and cook for 4 minutes on each side. Then remove from heat.
  • Step 9 ***This blackened tofu can be used on a plate of dark greens, or on a grain bowl for a great hearty meal!
  • Step 10 ***Grain bowls are great for each person to customize their own, allowing for personal flavors and tastes!
  • Step 11 Place greens at the bottom of the bowl and then add the grains.
  • Step 12 Top with blackened tofu and any other topping you would like.
  • Step 13 It is always nice to have 3 spreadable toppings along with the crunchier parts.
  • Step 14 Enjoy!
