Broccoli Salad (V, V+, GF)

Ingredients
- 4 cups chopped broccoli crowns
- 1/3 cup dried cranberries
- 1/3 cup raw slivered almonds
- 2 medium carrots (grated into shreds about 1/3 of a cup)
- 1 medium red or white onion (finely diced)
- Dressing:
- 1/3 cup vegan mayonaise
- 1 tablespoon apple cider vinegar
- 2 tablespoons of brown sugar or liquid date nectar
- Juice of 1 orange
Directions
- Step 1 Wash and cut the broccoli crowns in to small pieces. If you have a bit of stem, cut those into even smaller pieces and place into a bowl.
- Step 2 Dice the onion finely and add to the bowl.
- Step 3 Peel and shred the carrots and add to the bowl as well.
- Step 4 Also add the almonds and dried cranberries and mix lightly.
- Step 5 In a separate bowl, add the ingredients for the dressing and mix well.
- Step 6 Then add the dressing to the broccoli mixture and mix in well.
- Step 7 Let set for 20 minutes before serving.
- Step 8 **This amount of dressing gives moisture and flavor while allowing it to stay crisp! If you want move ‘coverage’ or more of a sauce, double the dressing.
