Ingredients
  • Olive oil
  • 3 1/2 teaspoons Garam Masala
  • 1 1/2 teaspoons coriander seeds
  • 1 1/2 teaspoons turmeric
  • 1 teaspoon curry
  • Salt to taste
  • 3 teaspoons chopped garlic
  • 1/4 teaspoon cayenne pepper
  • 28 ounces diced tomatoes in juice
  • 1 medium onion diced
  • 1 cup basmati rice
  • 2 cups water

Directions
  • Step 1 Pull all of your ingredients together prior to starting as they are added in fairly quick succession.
  • Step 2 Drizzle olive oil in a saute pan and put on medium heat. Then add the coriander seeds and begin cooking.
  • Step 3 Next, add the chopped garlic and continue cooking for about 2 minutes.
  • Step 4 Add the diced onions and add additional oil if needed as these sauté until lightly translucent.
  • Step 5 At this point add all of the seasonings and the tomatoes and stir thoroughly.
  • Step 6 Drain and rinse the 2 cans of garbanzo beans and mix them in. Then allow this to cook down on low heat stirring occasionally. The longer this can sit, the deeper the flavors become as it sets in.
  • Step 7 In a separate pan, add the 2 cups of water and the one cup of brown rice and bring to boil.
  • Step 8 When at a high boil, reduce the heat to low and place a lid on the pan until thoroughly cooked. This generally takes 20 – 25 minutes.
  • Step 9 This is a great flavorful hearty meal which is lovely served with warm bread and salad.
