Chocolate Chip Cookies with Pecans and Oats (V)

Ingredients
- 1 stick salted butter
- 1 egg
- 1/3 cup white sugar (I use raw cane sugar)
- 1/3 cup brown sugar
- 1 teaspoon vanilla
- 1 cup unbleached all-purpose flour
- 3/4 teaspoon baking soda
- 1/3 cup oats
- 1/2 a bag of chocolate chips (Ghiradelli Dark or Vegan Dark)
- 1/3 cup raw pecan pieces
Directions
- Step 1 In a large mixing bowl add the butter and white and brown sugars and blend together thoroughly.
- Step 2 Next, add in the egg and vanilla and blend in.
- Step 3 Then add the flour, baking soda, and oats, and mix.
- Step 4 Finally, add in the chocolate chips and the pecan pieces and blend together.
- Step 5 Prepare a cookie sheet with parchment paper and balls of cookie dough, about 1/2 the size of a golf ball.
- Step 6 Arrange on the tray with about 1 1/4″ between them.
- Step 7 With the oven preheated to 350°F place the cookie tray in the oven and bake for 8 minutes. They will be done when they have a lovely golden color.
- Step 8 Remove from the oven and enjoy!
