Chocolate Lava Cake (V)

Ingredients
- 6 ounces bittersweet chocolate (I use Ghirardelli dark chips)
- 1/4 cup flour
- 1/2 cup confectioner sugar
- 2 eggs and 2 egg whites
- 1/2 cup of salted butter
- olive oil spray
- unsweetened cocoa powder to powder baking containers

Directions
- Step 1 Preheat the oven to 425°F.
- Step 2 Over medium heat, cut butter into pieces into a saucepan and melt stirring constantly.
- Step 3 Add the chocolate pieces to the melting butter and stir while melting together.
- Step 4 Remove from heat.
- Step 5 In a bowl mix the flour confectioner sugar while in another bowl beat the eggs and egg yokes together until well blended.
- Step 6 Add the dry ingredients and the eggs to the chocolate mixture and mix thoroughly. Set aside.
- Step 7 Take your ramekins, small baking cups or cupcake holders and spray with the olive oil spray.
- Step 8 Next, take unsweetened cocoa powder and dust over the inside of the baking containers. This is a wonderful trick that helps them come out smoothly and with ease!
- Step 9 Add equal amounts of batter into each container and bake for 10 to 12 minutes.
- Step 10 Remove from heat and turn over onto a plate.
- Step 11 **Lovely served with whipped cream or ice cream!
