Creamy Asparagus Soup (V, V+, GF)

Ingredients
- 1 1/2 bunches of fresh asparagus
- 32 ounces (4 cups) vegetable broth
- 1 can (14 ounces) unsweetened coconut milk
- 1 medium white onion (diced)
- 2 cloves of garlic (diced)
- 2 teaspoons fresh thyme
- 2 tablespoons oil for sauteing
- Salt and pepper to taste
- Red pepper, thinly sliced for garnish

Directions
- Step 1 In a large soup pan, drizzle oil and saute diced onion over medium heat for 3 to 5 minutes.
- Step 2 Add garlic and continue cooking for 2 minutes.
- Step 3 After removing the ends, cut the asparagus into 2 inch pieces and place into pan for sauteing.
- Step 4 Add the vegetable broth at the same time keeping the medium heat.
- Step 5 Stir in the coconut milk and add the thyme, salt and pepper
- Step 6 Place a lid on the pan and reduce the heat to low and let simmer for another 20 minutes.
- Step 7 **Top the soup with your favorites: fresh red pepper, sauteed asparagus tops, vegan parmesean cheese or more fresh herbs!
- Step 8 **Lovely, flavorful, warm full body soup that is ideal with warm crusty bread.
