Ingredients
  • 1 1/2 bunches of fresh asparagus
  • 32 ounces (4 cups) vegetable broth
  • 1 can (14 ounces) unsweetened coconut milk
  • 1 medium white onion (diced)
  • 2 cloves of garlic (diced)
  • 2 teaspoons fresh thyme
  • 2 tablespoons oil for sauteing
  • Salt and pepper to taste
  • Red pepper, thinly sliced for garnish

Directions
  • Step 1 In a large soup pan, drizzle oil and saute diced onion over medium heat for 3 to 5 minutes.
  • Step 2 Add garlic and continue cooking for 2 minutes.
  • Step 3 After removing the ends, cut the asparagus into 2 inch pieces and place into pan for sauteing.
  • Step 4 Add the vegetable broth at the same time keeping the medium heat.
  • Step 5 Stir in the coconut milk and add the thyme, salt and pepper
  • Step 6 Place a lid on the pan and reduce the heat to low and let simmer for another 20 minutes.
  • Step 7 **Top the soup with your favorites: fresh red pepper, sauteed asparagus tops, vegan parmesean cheese or more fresh herbs!
  • Step 8 **Lovely, flavorful, warm full body soup that is ideal with warm crusty bread.
