Ingredients
  • 1 medium onion
  • 4 ounces of chopped mushrooms
  • 5 to 6 stalks of asparagus
  • 1 medium tomato
  • 2 to 4 ounces of cheese of your choice (in small pieces)
  • 5 eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • Extra virgin olive oil
Directions
  • Step 1 Lightly pour about 3 tablespoons of olive oil in a pan.
  • Step 2 Dice up both the onion and asparagus and place in pan and begin to saute. Use some salt and pepper on these vegetables.
  • Step 3 Next, add the chopped mushrooms and continue to cook.
  • Step 4 In a separate bowl, crack 5 eggs, add the milk and whisk.
  • Step 5 Add salt and pepper and small pieces of cheese and stir in.
  • Step 6 Take out a pie pan and gently coat with oil.
  • Step 7 Place the sauteed vegetables into the pie pan and pour the egg mixture over the vegetables and mix the ingredients together.
  • Step 8 Then take thin slices of the round tomato and place on top, even pressing down lightly.
  • Step 9 Add a bit more salt and pepper.
  • Step 10 Bake at 350°F for 40 minutes. Check if done by putting a fork or knife in and the blade should come out clean.
