Curried Butter and Parmesan Crackers (V, V+ option)

Ingredients
- 3/4 cup all-purpose unbleached flour
- 1 teaspoon of salt
- 2 teaspoons curry powder
- 7 ounces favorite hard cheese, grated (I use gruyere)
- 1/3 cup butter (or vegan butter), softened

Directions
- Step 1 1. Preheat the oven to 350 °F and place parchment paper on a baking pan (if not using paper – grease lightly).
- Step 2 2. Sift the flour, salt and curry powder into a mixing bowl.
- Step 3 3. Using your fingers or a wooden spoon, gently mix in the softened butter with the flour mixture, until it forms a soft dough.
- Step 4 4. On a lightly floured surface, roll out the dough to form a thin layer. Using a knife, or cookie cutter, cut out your own cracker shapes.
- Step 5 5. Place on the baking sheets and bake 10 to 15 minutes. Allow the crackers to cool on the sheets for 15 minutes and then transfer to cooling racks.
