Fluffy Pancakes (V)

Ingredients
- 1 1/2 cups flour
- 2 tablespoons sugar
- 3 teaspoons baking powder
- 1 egg
- 1 1/2 cup milk
- 1 teaspoon cinnamon
- Makes about 10 pancakes
Directions
- Step 1 Blend the flour, baking powder, sugar and cinnamon in a mixing bowl.
- Step 2 Next, add the egg and the milk and mix the ingredients thoroughly. If it is a bit thick a small additional amount of milk or water.
- Step 3 Scoop 1/4 to 1/2 cup of batter onto a pancake griddle.
- Step 4 Cook on medium heat.
- Step 5 When you observe bubbles appear in the batter and open, it is time to flip over.
- Step 6 **Note you can add banana, apple or strawberry slices to the poured batter.
- Step 7 **Top these light, thick and fluffy pancakes with butter, syrup, whipped cream or any favorite topping!
