French Onion Soup (v, v+)

Ingredients
- 3 large sweet onions
- 32 ounces vegetable broth
- 1/3 cup chardonnay
- 8 ounces baby Bella mushrooms
- 1 tablespoon molasses
- 1 tablespoon vegan Worcester sauce
- 3/4 tablespoon soy sauce
- Salt and pepper
- Olive oil
- 2 tablespoons vegan butter
Directions
- Step 1 Start by peeling and slicing the onions into bite size pieces.
- Step 2 In a large deep pan, drizzle olive oil and add the sliced onions and sautee on medium.
- Step 3 After 5 minutes add the baby portobella slices to the onion mixture.
- Step 4 Salt the onions and mushrooms and add the 2 tablespoons vegan butter. Continue cooking down the onions (12 – 15 minutes).
- Step 5 Add the chardonnay and continue cooking for another 5 minutes.
- Step 6 Then add the Worcester sauce, soy sauce and molasses and stir.
- Step 7 Add the 32 ounces of vegetable broth and simmer for 30 minutes.
- Step 8 The soup is complete and ready to eat!
- Step 9 ***If you would like, you can place a slice of toasted crusty French bread on top of the soup and sprinkle with vegan cheese and slide under the broiler.
