Galumpkis (stuffed cabbage roll) (V, V+, GF)

Ingredients
- 3/4 cup uncooked basmati rice (or rice of choice)
- 6 ounces beyond meat
- 1 medium onion, diced
- 2 cloves of garlic, diced
- 1 small zucchini, diced
- 1 pepper, diced
- 1 medium carrot, diced
- 1/2 head of Napa cabbage (about 8 - 10 leaves)
- 3 teaspoons fresh thyme
- Salt and pepper to taste
- Olive oil for sautéing if needed
- ***Adapted from a childhood meal at dear family friends home!
Directions
- Step 1 Cook the rice and remove it from heat
- Step 2 In a separate pan, saute the diced onion for two minutes then add the chopped garlic and diced carrots and continue cooking.
- Step 3 Then add the chopped zucchini and peppers while sauteing.
- Step 4 When the vegetables look done (soft and translucent with some darkened coloring) remove from heat and put aside in a bowl.
- Step 5 Using the same saute pan, add the beyond meat and saute until light brown.
- Step 6 Once done, add the vegetables, thyme, rice, and salt and pepper to taste.
- Step 7 In a large pot, heat water to boiling and add the individual cleaned leaves of cabbage. Cook for three to four minutes and remove.
- Step 8 Put in a strainer and run cold water over the leaves, then set on paper towels to dry.
- Step 9 To assemble:
- Step 10 Layout the cabbage leaf and place 1/3 cup of filling on the top half.
- Step 11 Fold left and right sides of leaves over the filling and then take the lower part and fold up over the whole center.
- Step 12 Take the top and fold down over filling while lifting and placing seam side down in baking dish.
- Step 13 Nestle the galumpkis in a baking dish, cover, and bake for 20 minutes at 350°F
- Step 14 Remove from oven, and enjoy!
