Golden Beets with Shallots and Orange (V, V+, GF)

Ingredients
  • 4 fresh medium golden beets
  • 1/4 cup chopped flat leaf parsley
  • Olive oil for applying to skins of beets
  • Salt and pepper for seasoning
  • 4 tablespoons vegan butter
  • 1/3 cup diced shallots
  • Zest of one orange
  • Juice of one orange (we used Cara Cara oranges)

Directions
  • Step 1 Preheat the oven to 400°F
  • Step 2 Clean and cut off the greens from the beets and then rub olive oil all over the skins.
  • Step 3 Set on a large piece of foil and salt and pepper thoroughly and then tightly close the foil around the beets.
  • Step 4 Bake on a tray for 1 hour or until tender. Test this with a fork or knife with either going in and coming out easily.
  • Step 5 In a saute pan, add the vegan butter and the finely diced shallots and cook over medium heat until slightly caramelized. Then add the juice from one orange, stir and remove from the heat.
  • Step 6 After the beets were allowed to cool down, use a fork in a scraping motion to peel off the outer skin layer. I find it helpful to use a cloth to hold the top of the beet in place when removing the skin.
  • Step 7 Then cut the beets down about halfway through and about 1/4 of an inch thick slices.
  • Step 8 Put oil on the beets again (I find it easiest to use an olive oil spray) then salt and pepper and place under the broiler for 12 minutes. You are looking for a browning over the beet.
  • Step 9 Remove from the oven and drizzle the orange and scallion with chopped parsley all over and serve.
