Green Salad with Egg and Tomato (V, V+, GF)

Ingredients
- 5 ounces dark mixed greens of your choice
- 2 eggs
- 1 cucumber
- 1 large tomato (or 1 cup cherry tomatoes)
Directions
- Step 1 Take 2 eggs and submerge in pan of water.
- Step 2 On high temperature, bring water to boil, and keep boiling so eggs harden (may take 7 minutes).
- Step 3 Remove from heat and run cold water over eggs, then peel and slice.
- Step 4 Place mixed greens in a serving bowl.
- Step 5 Peel and dice cucumber.
- Step 6 Cut tomatoes into bite size pieces.
- Step 7 Place toppings over greens.
- Step 8 **If desired, serve with your favorite dressing.
