Grilled Vegetables and Halloumi Cheese Wrap (V)

Ingredients
- 6 ounces halloumi cheese thinly sliced
- 2 medium onions peeled and sliced in 1/4 rounds
- 1 medium + sized zucchini sliced lengthwise in thin strips
- 1 pepper cut in wider flat edges to hold shape for grilling
- Olive oil for grilling
- Salt and pepper to taste
- 2 + cups fresh baby spinach
- Tahini dressing, or hummus to taste
- 4 pieces lavash or favorite wrap
Directions
- Step 1 Heat a stovetop grill, or use a large flat pan, and lightly cover with oil. (A non-stick surface is helpful).
- Step 2 Place the vegetables on the heated surface and cook giving at least 3 minutes on each side. Peak lifting and edge and if softening and browning, ok to flip.
- Step 3 Use salt and pepper to season while grilling/cooking.
- Step 4 Remove vegetables and place to the side on a plate.
- Step 5 With the grill still hot, reduce heat to medium and place halloumi cheese onto the grill. Check the underside and if grill marks appear, flip to finish cooking.
- Step 6 Prepare to assemble your wraps. This can be done individually or everything can be plated and brought to the table and everyone ‘builds out’ their own wrap.
- Step 7 We used lavash, tahini dressing (thin strip down the center) then added fresh baby spinach, topped with our favorite grilled vegetables, and topped with piping hot halloumi cheese!
