Ingredients
  • ****Vegetables of your choice
  • 1 - 2 zucchini
  • 1 summer squash
  • 1 large onion
  • ****can use peppers, leeks
  • Olive oil
  • Salt and pepper
  • Outdoor grill or indoor grill plate
Directions
  • Step 1 Wash and thinly slice vegetables about 1/4 inch thick
  • Step 2 Heat grill and place vegetables on it and drizzle lightly with oil.
  • Step 3 Salt and pepper lightly and use tongs or fork to flip after 2 to 3 minutes. There should be grill marks and should be softened.
  • Step 4 **These are great as stand-alone veggies or served on rustic bread with havarti cheese.
