Grilled Vegetables (V, V+, GF)

Ingredients
- ****Vegetables of your choice
- 1 - 2 zucchini
- 1 summer squash
- 1 large onion
- ****can use peppers, leeks
- Olive oil
- Salt and pepper
- Outdoor grill or indoor grill plate
Directions
- Step 1 Wash and thinly slice vegetables about 1/4 inch thick
- Step 2 Heat grill and place vegetables on it and drizzle lightly with oil.
- Step 3 Salt and pepper lightly and use tongs or fork to flip after 2 to 3 minutes. There should be grill marks and should be softened.
- Step 4 **These are great as stand-alone veggies or served on rustic bread with havarti cheese.
