Hummus (V, V+, GF) *Oh So Smooth!

Ingredients
  • 1 can chick peas, drained
  • 2 cloves garlic, peeled
  • 3 tablespoons olive oil
  • 3- 4 tablespoons of tahini
  • 1/2 - 1 lemon ( to taste)
  • Ice cubes
  • 1/4 teaspoon of salt - or to taste
  • and optional topping of olive oil, sumac and cumin

Directions
  • Step 1 1. Rinse chick peas in a bowl and while running the water, use your fingers to rub the skins off. As you tip the bowl to drain the water scoop out the skins. This will help with the beautiful smoothness.
  • Step 2 2. Place into a food processor / blender.
  • Step 3 3. Squeeze in the juice of the lemon.
  • Step 4 4. Add the tahini, olive oil and the garlic cloves.
  • Step 5 5. Run the processor for 1 – 2 minutes.
  • Step 6 6. For extremely smooth and divine hummus add 1 ice cube and blend for another minute.
  • Step 7 7. Repeat step 6 3 – 4 more times and when you pause the blender, taste and add tahini, salt or olive oil to taste.
  • Step 8 8. Spread into a bowl and drizzle Olive oil over the top.
  • Step 9 9. Top with Sumac and possibly Cumin if you like the flavor.
  • Step 10 10. Best to let sit for a few hours if you can hold out to let the flavors settle in.
  • Step 11 11. Enjoy with pita, crackers, Lavash or chips!
