Orange Cupcakes! (V, V+, GF)

Ingredients
- 1 1/2 cups unsweetened non-dairy milk
- 1 1/2 tablespoons apple cider vinegar
- 2 3/4 cups unbleached flour (pastry flour would work too)
- 1 tablespoon baking powder
- 1 1/2 cups granulated sugar (I used raw cane)
- 1 teaspoon orange extract
- 1/2 teaspoon vanilla extract
- 1 orange peel grated
- 1/2 cup vegetable oil
- For the Frosting:
- 1/2 cup vegan butter
- Juice from 1/2 an orange
- 3+ cups confectioner sugar

Directions
- Step 1 Preheat oven to 350°F and put 12 cupcake liners in a cupcake pan.
- Step 2 Add the vinegar to the non-dairy milk and stir and set aside.
- Step 3 Next, In a large mixing bowl add the flour, sugar, and baking powder.
- Step 4 Then add the non-dairy milk mixture, the oil and the orange and vanilla extracts, and blend. Next blend in the grated orange peel.
- Step 5 Scoop the batter into each cupcake paper. For mine, it took about 1/3 of a cup that filled the liner and made 12 cupcakes.
- Step 6 Bake in preheated oven for 20 minutes.
- Step 7 Remove from the oven and take the cupcakes out of the tin. If you choose to let them cool in the tin, they will continue to cook a bit more while still hot.
- Step 8 For the Frosting:
- Step 9 In a mixer blend in the confectioner sugar 1/2 cup at a time with the vegan butter. Add the juice of half an orange. Test the flavor and consistency of the frosting. If you would like more flavor, you can add more juice or orange extract. If you want a thicker consistency, ad a bit more, confectioner sugar.
- Step 10 When cool, frost and enjoy!
