Orange Scones (V, V+)

Ingredients
- For the Scones:
- 2 cups all purpose flour
- 1 tablespoon baking powder
- 2 oranges (to grate/zest the peels)
- 1/3 cup sugar ( I use raw cane)
- 1/4 cup vegan butter ( I use Earth Balance)
- 3/4 cup non dairy milk ( I use silk cashew almond)
- 2 tablespoons orange juice
- For the Glaze:
- 1/2 cup confectioner sugar
- 2 tablespoons orange juice (from the zested orange)
- 1 tablespoon non dairy milk
Directions
- Step 1 Preheat the oven to 350°F
- Step 2 In a mixing bowl, add the flour, baking powder, sugar and grated peel / zest of 2 oranges and mix lightly.
- Step 3 Next add the vegan butter in small pieces.
- Step 4 Then drizzle in the non dairy milk and mix on low in a mixer or if by hand add small portions at a time.
- Step 5 The dough will hold with a bit of cracking but if you pick up a handful and press, it will hold together and not be sticky.
- Step 6 On a board or countertop, sprinkle flour lightly and take the dough, pressing it into a ball and place on the board.
- Step 7 Sprinkle a bit of plower on top and press down. Using a rolling pin, roll out until about 1/4 inch thick. (If you don’t have a rolling pin, use hands and press down and out).
- Step 8 You can create a nice circle and slice into ‘pieces of pie’ shapes, or you can have fun and use cookie cutters :).
- Step 9 Bake for 17 minutes in a preheated oven and check the doneness. They should be raised, and may have very slight browning on the edges.
- Step 10 Remove from oven and take off tray and let cool.
- Step 11 For Glaze:
- Step 12 In a bowl, place 1/2 cup confectioner sugar.
- Step 13 Gradually add 1 tablespoon of orange juice and 1 tablespoon of non dairy milk and blend thoroughly. Taste and look at the thickness of glaze and choose if you want to add additional orange juice.
- Step 14 Drizzle with glaze and enjoy!
