Orzo, Tomato, Basil, Feta Summer Salad (V, V+, GF)

Ingredients
- 16 ounce box of orzo pasta
- 1 large tomato (diced, about 2 + cups) or mini multi colored tomatoes
- 1 medium onion or 1 large shallot (finely diced)
- 1/2 cup fresh basil washed and torn
- 6 ounces feta (or Follow Your Heart vegan feta)
- Salt and pepper to taste
- Optional: drizzle with a balsamic vinegarette and mix thoroughly
Directions
- Step 1 Prepare the orzo pasta according to the box. Make sure to rinse in cold water so it does not overcook while draining.
- Step 2 Wash and dice the onion, tomatoes and basil and set aside.
- Step 3 Once cool, mix all ingredients together (including the feta) for a fresh, filling and fun flavored summer salad!
- Step 4 Be sure to drizzle with your favorite dressing as well.
