Panini

Ingredients
- 2 slices of your favorite bread (look for vegan if needed)
- 1/4 cup of guacamole or 1/4 of a sliced avocado
- 2 slices of cheese or vegan cheese
- 2 - 3 slices of tomato
- 2 slices of vegetarian or vegan bacon
- 1/4 cup of dark spring lettuce mix
- *** Note: Paninis can be made with any ingredients that give you your favorite flavors. You just want to be aware of dryness/moisture with ingredients and flavors that would work well together when warmed!
Directions
- Step 1 Take 2 slices of vegetarian or vegan bacon and layout on a pan and broil both sides just until lightly brown.
- Step 2 Place two slices of bread side by side and put on the guacamole or avocado slices on one side.
- Step 3 Place the cheese or vegan cheese on the other slice of bread.
- Step 4 Then top with the tomato slices and then the spring mix.
- Step 5 When vegetarian or vegan bacon is done, place on top of the avocado or guacamole.
- Step 6 Place two sides together and press in a panini press until done. Usually for about 2 minutes.
- Step 7 Remove from the press, cut in half and enjoy!
