Peach Coffee Cake Crumble (V)

Ingredients
  • 4-5 peaches peeled and cut into chunks
  • 2 cups unbleached flour
  • 1 cup light brown sugar
  • 3 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1 cup milk (or non dairy milk)
  • 1 egg (or flax egg, or 3 ounces applesauce)
  • For Crumble Topping:
  • 1/2 cup flour
  • 4 tablespoons butter (or vegan butter)
  • 1/2 cup light brown sugar
  • 1 teaspoons cinnamon sugar
Directions
  • Step 1 Preheat oven to 350 °F and lightly grease an 8″ x 8″ pan (set aside)
  • Step 2 Peel and slice peaches into bite-size chunks and place in a medium bowl. Then dust with a tablespoon of flour and mix
  • Step 3 In a separate large bowl, add the flour, sugar, baking powder, milk, and one egg and mix thoroughly.
  • Step 4 For the crumble, place the flour, brown sugar, cinnamon, and butter in the bowl, and using your hands, a fork or knife, mix, blend or chop the ingredients together!.
  • Step 5 It will bend together somewhat but having the crumbly bits is ideal as well!
  • Step 6 Take the dough mix and spread half of it on the bottom of the greased 8″ x 8″ pan.
  • Step 7 Next, pour and spread the peach chunks over the whole area.
  • Step 8 Take the remaining batter and dollop it all over the top covering as much as you can. Then drop the crumble in bits all over the top and press down slightly.
  • Step 9 Bake in a 350 °F oven for 20 minutes and check – the top should be a golden color and an inserted knife or toothpick should come out fairly clean (you may get juice from the peach which is fine. You just don’t want wet dough).
  • Step 10 If not cooked through keep in the oven for another 3 minutes and check.
  • Step 11 Enjoy!
