Quick and Easy Flatbread Pizza (V, V+)

Ingredients
- Flatbread pizza crusts (I used Brooklyn Bred Pizza Crusts)
- Red sauce (just ensure ingredients are vegan)
- 1 large onion (I use red, slice in full thin rings)
- 4 toes garlic, chopped
- 2 medium tomatoes
- 1/4 cup basil leaves
- 8 ounces mozzarella vegan cheese (I use grated Daiya)
- 4 tablespoons vegan parmesan (I use Good Earth)
- Olive oil for sauteing or in place of red sauce with garlic
- Salt and pepper to taste
- Vegan pesto - optional (I use Trader Joes brand)
- Traditional mozzarella cheese - optional if not needing vegan
- **You can make several variations to serve a host of dietary needs that everyone enjoys! Choose your favorite way
Directions
- Step 1 Preheat the oven to 350°F.
- Step 2 In a pan on low heat, drizzle olive oil and place thinly sliced rings of onion, chopped garlic, and thinly sliced peppers and saute. Salt and pepper as needed while sauteing.
- Step 3 Top the flatbread with your choice of sauces, red sauce, pesto or olive oil and garlic (make sure ingredients are vegan if desired).
- Step 4 Then sprinkle on the cheeses you would like, dairy or non dairy.
- Step 5 Then spread out the sauteed vegetables evenly along the flatbread and salt and pepper.
- Step 6 Add thin slices of fresh tomato and add additional cheese of your choice (vegan or dairy) lightly along the top.
- Step 7 Place in preheated oven and heat for 20 minutes.
- Step 8 Remove from the oven and slice.
- Step 9 This is great for several people to much on and you can make many varieties so all palates and diets are met!
