Quick Jam (V, V+, GF)

Ingredients
- 3 1/2 cups fresh or frozen fruit of your choice
- 15 g unsweetened pectin
- 2 1/4 cups sugar
- 1 lemon or lime
- **This will make enough for 2 16 ounce jars
Directions
- Step 1 Pour fruit into a pan and on high heat, begin to cook down while stirring constantly.
- Step 2 Add the juice from 1 lime and the pectin powder as you continue to stir.
- Step 3 As this begins to boil and the fruit breaks down, mash or break down with a utensil.
- Step 4 Add sugar and mix while at a boil for another full minute.
- Step 5 Remove from heat and pour into sterilized jars leaving about 1/8 of an inch of space at the top.
- Step 6 **Each type of fruit comes with its own levels of sweetness, so as you play with this recipe, you can adjust the sugar accordingly.
- Step 7 **Pectin helps ‘set’ the jam. This recipe, uses 15 g of pectin and the jam is a bit ‘loose’ if you would like a firmer set, I suggest adding an additional 5 g.
- Step 8 Let cool and enjoy!
