Quinoa and Sweet Potato Veggie Burger (V, V+, GF)

Quinoa and Sweet Potato Veggie Burger (V, V+, GF)

Ingredients
  • 2 tablespoons extra virgin olive oil
  • 1/2 medium white onion (finely diced)
  • 2 large cloves of garlic ( finely diced)
  • 3/4 cup dried quinoa
  • 1 1/2 cups water (to cook quinoa)
  • 1 medium sweet potato (peeled, diced, and boiled)
  • 1/2 cup raw pistachios (or other nuts you choose)
  • 1 can of cannellini or chickpeas (rinsed)
  • 1 tablespoon Coconut Aminos or Tamari (like soy but no histamines, V, V+, GF)
  • 1 bunch chopped fresh carrot top greens, or cilantro or parsley
  • 2 tablespoons ground flax seeds (add to 8 tablespoons water for egg substitute - binder)
  • Salt and pepper to taste
  • Lemon
  • Gluten-Free buns :)!
  • Toppings of your choosing.
  • *We used slice yellow pepper rounds, grated red carrots, fresh butter lettuce, tomato, and vegan mayo with fresh basil

Directions
  • Step 1 1. Peel, dice and boil the sweet potatoes. When done, remove from heat, drain, and set aside.
  • Step 2 2. Cook the quinoa initially on high heat, reduce to low when the first boil appears, and place a lid while it continues to cook until soft and fluffy, usually 8- 10 minutes. Then remove from heat.
  • Step 3 3. In a pan, add oil onions, and garlic and saute on medium.
  • Step 4 4. Rinse the beans and add to the pan.
  • Step 5 5. Add the raw pistachios and saute in, bringing out the nuttiness flavor.
  • Step 6 6. Add in the quinoa and the sweet potatoes.
  • Step 7 7. Add the coconut aminos and salt and pepper, stirring in.
  • Step 8 8. Remove from heat, transfer into a bowl and using a potato masher, break down some of the beans.
  • Step 9 9. Add the flax eggs to the mix.
  • Step 10 10. Also add the chopped carrot greens and mix them all together.
  • Step 11 11. Using a 1/2 cup scoop, lift out mix and place on the hot griddle while pressing down into burger shape. (Use more or less mix to create the best burger size).
  • Step 12 12. Flip and cook other side (usually about 3 minutes per side).
  • Step 13 13. When done, place on a bun or bed of lettuce, top with favorite accoutrements and enjoy!!!
