Ingredients
  • 1 1/2 cups quinoa
  • 3 cups water
  • 3 stalks celery, chopped
  • 1 medium onion, diced
  • 3 medium carrots, diced
  • 2 large cloves garlic, diced
  • 1 teaspoon fresh rosemary, diced
  • Salt and pepper to taste
  • 3 tablespoons olive oil to saute
  • 1 tablespoon vegan butter to saute
  • **Quick, warm and flavorful dish with protein!
Directions
  • Step 1 In a medium pan with a lid, place 3 cups of water and 1 1/2 cups of quinoa and place on high and stir.
  • Step 2 When this comes to boil, turn heat to low and let cook with the lid on for another 15 – 20 minutes. When it has absorbed most of the water, increased in size and is soft, remove from heat.
  • Step 3 In a saute pan, drizzle the oil and add the carrots, onions, celery, and garlic. Saute on medium heat until onions become translucent and then show heat marks. Add the tab of vegan butter and the diced rosemary and stir. Continue sauteing and salt and pepper to taste.
  • Step 4 Take off the heat and then add the cooked quinoa and thoroughly mix together.
  • Step 5 Plate and enjoy! Very flavorful and falls under quick and easy.
