Rainbow Ratatouille (V, V+, GF)

Absolutely delicious, with great flavor! Wonderful way to display the fall harvest!
Ingredients
- 14.5 ounces diced stewed tomatoes
- 2 medium zucchini (similar diameter to summer squash)
- 2 medium summer squash (similar diameter to zucchini)
- 1 medium red onion
- 3 cloves of garlic peeled and cut into large pieces
- Olive Oil (your favorite)
- Salt and pepper to taste
Directions
- Step 1 Preheat the oven to 375 °F.
- Step 2 In a deep sided baking dish, spread the diced tomatoes on the bottom.
- Step 3 Wash and evenly slice the zucchini, yellow squash, tomato and red onion. Also, peel and slice the garlic cloves.
- Step 4 Following the shape of the baking dish, layer in a pattern all of the vegetables and repeat the pattern. I found using double the zucchini and yellow squash helped with the flavor balance.
- Step 5 Tuck in throughout the dish the pieces of garlic.
- Step 6 Drizzle top with olive oil and generously salt and pepper.
- Step 7 If you desire, chop up fresh basil and tuck it among the slices as well, or top with fresh basil leaves, when serving.
