Rice with Onions, Peas and Spinach (V, V+, GF)

Ingredients
- 3 1/4 cups vegetable broth
- 1 1/2 cups white arborio rice
- 1/2 cup peas (can be frozen)
- 2 - 3 teaspoons chopped garlic
- 1+ cup of fresh baby spinach
- 1 medium onion (white or Vidalia preferred)
- Salt and pepper to taste
- olive oil to saute
Directions
- Step 1 Place 2 1/2 cups of vegetable broth and the 1 1/2 cups rice in a pot and place on high heat until it comes to a boil.
- Step 2 Reduce heat to lowest setting stir briefly, cover and cook for 10 minutes and then add the additional broth. Keep on the lowest heat and check back in another 10 minutes and stir.
- Step 3 Check to see if it is cooked through or still needs additional time. If it is dry but a bit firm, add another 1/4 cup vegetable broth and stir then replace the lid.
- Step 4 Add in the peas to the rice, stir and set aside off the heat.
- Step 5 In a saucepan drizzle olive oil and add a diced onion and garlic and saute on medium heat for about 7 minutes stirring occasionally.
- Step 6 When browned, add 1/4 cup vegetable broth, and a cup of baby spinach turning over slowly. As the spinach wilts it gets easier.
- Step 7 Then add the rice with peas to the saute pan and mix in.
- Step 8 Salt and pepper to taste.
