Spinach and Polenta Salad (V, V+ option, GF)

Ingredients
- 2 slices of tube polenta
- 2 1/2 ounces baby spinach
- 1 small onion (red or yellow)
- 2 tablespoons of olive oil
- 2 tablespoons of vegan butter (I use Earth Balance)
- Salt and pepper to taste
- Feta Cheese (vegan if desired)
Directions
- Step 1 Drizzle 1 tablespoon olive oil in a pan on medium heat.
- Step 2 Chop the onion and add to the pan and saute. Add salt and pepper.
- Step 3 As it is cooking add 1 teaspoon vegan butter to the sauteing onions (this enhances the flavor while cooking).
- Step 4 Once slightly carmelized remove the onions from from the pan.
- Step 5 Drizzle a bit more oil and place a teaspoon of butter and let heat.
- Step 6 Add the 2 slices of polenta and let brown for about 2 minutes per side until slightly browning. If you have an indoor grill and would prefer to use this with the polenta that would work as well.
- Step 7 Plate the spinach and then add the sauteed onions, the vegan feta cheese and the warm polenta.
- Step 8 Enjoy plain or drizzle with a flavored vinegarette.
