Sprouts, Greens and Tomato Salad (V, V+ option, GF)

Ingredients
- 1 bunch (about 6 ounces) of fresh dark green lettuce (or your favorite greens)
- 1 bunch broccolini
- 1 medium tomato, chopped
- 1 bunch chives, cut into 2 inch lengths
- Assortment of sprouts )(such as chick pea, alfalfa, pea, bean, radish, broccoli)
- Bunch of micro greens (these are young, nutrient dense greens grown in soil)
- 1/4 cup vegan or dairy feta
Directions
- Step 1 1. Wash all of the greens before assembling your salad and dap dry with cloth.
- Step 2 2. Tear lettuce in to small bite sized pieces and place in a salad bowl.
- Step 3 3. Top in sections with your other favorite ingredients.
- Step 4 4. A delicious summer salad with wonderful flavors and crunch! Eat as is or serve with a side of dressings of your choice.
