Sticky Tofu (V, V+, GF)

Ingredients
- 1 pack tofu (firm or extra firm)
- 2 tablespoons oil
- 2 tablespoons corn starch
- 2 tablespoons tamari (gluten-free) sauce
- 1/2 teaspoon garlic salt
- For the sticky sauce
- 4 tablespoons maple syrup
- 1/2 teaspoon chopped garlic
- 1/4 - 1/2 teaspoon chili pepper flakes (flexible with your heat tolerance)
- 2 tablespoons tomato paste
- 3 tablespoons tamari sauce (gluten-free)
- 1 tablespoon vinegar
- 2 teaspoons corn starch

Directions
- Step 1 For the Tofu:
- Step 2 Begin by pressing the block of tofu on a plate with a weighted pan on top for 10 minutes. This helps press the water (excess moisture out of the tofu).
- Step 3 Drain any water and slice into small bite-size cubes. Add this to a bowl and then add the corn starch, garlic salt, and pepper and gently turn over to coat all pieces.
- Step 4 Using a non-stick large pan (or grill) heat thoroughly and add a tablespoon of oil.
- Step 5 Arrange the pieces of coated tofu on the non-stick surface and cook until golden and then flip to the other side (about 4 minutes on each side).
- Step 6 In a separate bowl, start pulling together the sticky sauce.
- Step 7 Add all of the ingredients under the sauce and using a fork or whisk, blend thoroughly, and set aside.
- Step 8 Drizzle this over the cooked tofu while still on the heated non-stick surface and coat thoroughly by flipping over. This takes about 2 – 3 minutes.
- Step 9 Remove from heat and serve!
- Step 10 Great with rice, steamed broccoli (either next to or mixed in with the tofu).
