Summer Orzo, Feta and Tomato Salad (V, GF)

Ingredients
- 16 ounces orzo pasta (white or whole wheat)
- 1 small red onion, diced
- 8 ounces grape tomatoes, diced
- 1/2 cup fresh basil chopped
- 1 sweet pepper, diced (color of your choice)
- 6 to 8 ounces brick feta, chopped into bite-sized pieces
- Dressing options: balsamic pear vinegar, balsamic vinegarette, peanut sauce.
Directions
- Step 1 Cook the orzo pasta (per instructions on box).
- Step 2 When done, promptly run cold water through it (you can place ice cubes on it to melt through while cooling).
- Step 3 Wash and dice the pepper, tomatoes, onion, and basil.
- Step 4 Combine pasta, vegetables, and feta in a large serving bowl.
- Step 5 **You can serve like this and provide dressing choices for people to mix into their individual portions or you can add a dressing prior to serving.
