Vegan Banana Bread, Muffin, Cake (V, V+)

Ingredients
  • 3 large overripe bananas, mashed (at least 1 1/3 cup)
  • 1/3 cup non-dairy milk (I used soy)
  • 1/3 cup oil
  • 2 tablespoons maple syrup
  • 2 teaspoons vanilla
  • 1 1/2 cup flour (I used 1/2 cup chickpea and 1 cup unbleached)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon of cinnamon
  • 1/2 cup rolled oats
  • 1/4 cup sugar (I used organic brown cane sugar)
  • *1/2 cup vegan chocolate pieces (optional)
  • *1/2 cup chopped raw pecans (optional)

Directions
  • Step 1 Preheat oven to 350°F
  • Step 2 Mash 3 large bananas thoroughly and then add the oil, maple syrup, non dairy milk and vanilla and mix together.
  • Step 3 Mix in the flour, baking powder, and baking soda, sugar, and oats. Then add the nuts and chocolate if you would like.
  • Step 4 Take a bread loaf pan or a round 9″ cake pan and spray with olive oil.
  • Step 5 Add the mix to the pan and bake for 22 minutes and check for doneness (a toothpick or knife should come out almost clean).
  • Step 6 When done, pull out of the oven and turn over onto a cooling rack, removing from pan.
  • Step 7 Enjoy!
