Banana Bread (V, V+)

Ingredients
- 3 large overripe bananas, mashed (at least 1 1/3 cup)
- 1/3 cup non-dairy milk (I used soy)
- 1/3 cup oil
- 2 tablespoons maple syrup
- 2 teaspoons vanilla
- 1 1/2 cup flour (I used 1/2 cup chickpea and 1 cup unbleached)
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon of cinnamon
- 1/2 cup rolled oats
- 1/4 cup sugar (I used organic brown cane sugar)
- *1/2 cup vegan chocolate pieces (optional)
- *1/2 cup chopped raw pecans (optional)

Directions
- Step 1 Preheat oven to 350°F
- Step 2 Mash 3 large bananas thoroughly and then add the oil, maple syrup, non dairy milk and vanilla and mix together.
- Step 3 Mix in the flour, baking powder, and baking soda, sugar, and oats. Then add the nuts and chocolate if you would like.
- Step 4 Take a bread loaf pan or a round 9″ cake pan and spray with olive oil.
- Step 5 Add the mix to the pan and bake for 22 minutes and check for doneness (a toothpick or knife should come out almost clean).
- Step 6 When done, pull out of the oven and turn over onto a cooling rack, removing from pan.
