A hearty, delicious fall soup!

Ingredients
  • 1 diced red onion
  • 1 tablespoon chopped garlic
  • 1 celery rib
  • 1 carrot
  • 4 medium fresh tomatoes diced or (1 large can of diced tomatoes )
  • 1 bunch of swiss chard
  • 1 bunch of kale
  • 1/2 small head of savoy cabbage (green)
  • 4 cups vegetable stock
  • 1 small can of cannellini beans
  • Olive oil for skillet
Directions
  • Step 1 Start with heating olive oil in skillet. Add diced onions and garlic and sauté.
  • Step 2 Next, chop and add celery and carrot.
  • Step 3 Chop kale and swiss chard and put into pan.
  • Step 4 Open and pour in the diced tomatoes and stir.
  • Step 5 Next, add chopped savoy cabbage and the vegetable stock.
  • Step 6 Stir and let simmer. Produces a thick and yummy soup!
  • Step 7 You can serve the soup over a slice of thick bread at the bottom of the bowl, or serve with a loaf of bread on the side. Top with parmesan and enjoy!
Swiss chard (remember to remove those gorgeous stems before putting in soup)!
