Vegetarian Italian Soup

A hearty, delicious fall soup!
Ingredients
- 1 diced red onion
- 1 tablespoon chopped garlic
- 1 celery rib
- 1 carrot
- 4 medium fresh tomatoes diced or (1 large can of diced tomatoes )
- 1 bunch of swiss chard
- 1 bunch of kale
- 1/2 small head of savoy cabbage (green)
- 4 cups vegetable stock
- 1 small can of cannellini beans
- Olive oil for skillet
Directions
- Step 1 Start with heating olive oil in skillet. Add diced onions and garlic and sauté.
- Step 2 Next, chop and add celery and carrot.
- Step 3 Chop kale and swiss chard and put into pan.
- Step 4 Open and pour in the diced tomatoes and stir.
- Step 5 Next, add chopped savoy cabbage and the vegetable stock.
- Step 6 Stir and let simmer. Produces a thick and yummy soup!
- Step 7 You can serve the soup over a slice of thick bread at the bottom of the bowl, or serve with a loaf of bread on the side. Top with parmesan and enjoy!
