Zucchini, Bok Choy and Garlic Quick Stir Fry (V, V+, GF)

Ingredients
- 2 medium zucchini
- 2 large toes of garlic, peeled and diced
- Baby bok choy (I had about 6, the amount is flexible)
- Olive oil to saute
- Sesame oil for drizzling flavor (about 3 teaspoons)
- Soy sauce or Braggs Liquid Aminos ( 2 - 3 teaspoons)
- Salt and pepper to taste
- Rice and water
Directions
- Step 1 Start by making rice and following the directions on the package (I used 3 cups of water to 1 1/2 cups of white basmati rice).
- Step 2 Wash the zucchini and dice into small pieces.
- Step 3 Peel and dice the garlic cloves.
- Step 4 Heat olive oil drizzled in a pan on low and add the diced zucchini and saute on medium heat. After 3 to 4 minutes add the garlic and continue cooking on low.
- Step 5 Cut the bottom end off of each baby bok choy and wash thoroughly (as dirt tends to get trapped in the base).
- Step 6 Add these pieces to the pan and using tongs, carefully toss as it continues cooking.
- Step 7 Drizzle with sesame oil and the soy sauce or Braggs Liquid Aminos according to taste and also salt and pepper.
- Step 8 When done, remove from heat and serve over the rice.
